Hot German Potato Salad

Ingredients

  • 6 medium potatoes
  • 6 slices bacon
  • ¾ cup chopped onion
  • 2 tbsp flour
  • tsp salt
  • ¼ tsp pepper
  • 1 tbsp sugar
  • ½ tsp celery salt
  • ¾ cup water
  • ½ cup vinegar

Instructions

  • Boil washed potatoes with skins on until tender. Peel and slice thinly.
  • Fry bacon until crisp and cook onion in bacon fat. Drain.
  • Mix the next 5 ingredients together; add water and vinegar.
  • Cook and stir until mixture boils. Boil 1 minute.
  • Pour over potatoes and add bacon.
  • Cover and let stand until ready to serve or keep warm in a casserole in a just warm oven.

  1. Seems like I was told that this was handed down from the Horn family. I made it once and thought it had too much vinegar.
