Hot German Potato Salad
Ingredients
- 6 medium potatoes
- 6 slices bacon
- ¾ cup chopped onion
- 2 tbsp flour
- 1½ tsp salt
- ¼ tsp pepper
- 1 tbsp sugar
- ½ tsp celery salt
- ¾ cup water
- ½ cup vinegar
Instructions
- Boil washed potatoes with skins on until tender. Peel and slice thinly.
- Fry bacon until crisp and cook onion in bacon fat. Drain.
- Mix the next 5 ingredients together; add water and vinegar.
- Cook and stir until mixture boils. Boil 1 minute.
- Pour over potatoes and add bacon.
- Cover and let stand until ready to serve or keep warm in a casserole in a just warm oven.

Seems like I was told that this was handed down from the Horn family. I made it once and thought it had too much vinegar.
