Rhubarb Crunch

Ingredients

Crunch

  • cups oatmeal
  • cups flour
  • 1 cup brown sugar
  • cup butter
  • ¼ tsp salt
  • 1 tsp cinnamon

Rhubarb

  • cups white sugar
  • 3 tbsp flour
  • cups water
  • 1 tsp vanilla
  • 5 cups rhubarb cut up

Instructions

  • Combine: 1½ cups oatmeal, 1¼ cups flour, 1 cup brown sugar, ⅔ cup butter, ¼ tsp salt, and 1 tsp cinnamon.
  • Mix to a crumbly mixture and pat in a buttered 9 by 13 pan. Save ⅓ for the top.
  • In a sauce pan cook: 1½ cups white sugar, 3 tbsp flour, and 1½ cups water until thick. Add 1 tsp vanilla, 5 cups cut up rhubarb and pour over crumb mixture.
  • Sprinkle remaining crumb mixture on top and bake at 350 degrees for 60 minutes until brown.
  • Garnish with whipped cream.
