Ingredients
Crunch
1½cupsoatmeal
1¼cupsflour
1cupbrown sugar
⅔cupbutter
¼tspsalt
1tspcinnamon
Rhubarb
1½cupswhite sugar
3tbspflour
1½cupswater
1tspvanilla
5cupsrhubarbcut up
Instructions
Combine: 1½ cups oatmeal, 1¼ cups flour, 1 cup brown sugar, ⅔ cup butter, ¼ tsp salt, and 1 tsp cinnamon.
Mix to a crumbly mixture and pat in a buttered 9 by 13 pan. Save ⅓ for the top.
In a sauce pan cook: 1½ cups white sugar, 3 tbsp flour, and 1½ cups water until thick. Add 1 tsp vanilla, 5 cups cut up rhubarb and pour over crumb mixture.
Sprinkle remaining crumb mixture on top and bake at 350 degrees for 60 minutes until brown.
