Ingredients
1½lbsyellow beansfresh
3cupscider vinegar
½cupwater
1tbspmixed pickling spices
¾tspsalt
¼tspground tumeric
1cupbrown sugar
Onion ringsoptional
Instructions
Wash beans and snip off the ends. Cook until tender in 2 cups boiling water to which ½ tsp. salt has been added. About 10 minutes.
Combine all the other ingredients and heat until it reaches a boiling point, and boil for 3 minutes.
Add ½ cup onion rings.
Pour this over the beans in the jars and seal at once. (I cook the beans and the other mixture at the same time in separate kettles, so the beans are hot when placed in the jar.)
