Ingredients
Pie Filling

Merengue Topping
3
egg whites
1
tsp
lemon juice
3
tbsp
sugar
Instructions
Pie Filling
Combine sugar, water, and butter. Heat until sugar dissolves.
Add corn starch blended with 3 tbsp water.
Cook very slowly till clear, about 8 minutes.
Add lemon juice and peel, cook 2 minutes.
Slowly add egg yolks beaten with milk, bring to boiling point and cool.
Put in 8-inch cooked and cooled pie shell.
Merengue Topping
Add 3 egg whites, 1 tsp lemon juice, and 3 tbsp sugar. Beat stiff.
Cover pie filling with merengue topping.
Bake at 350° till brown.
