Blueberry Muffins

Ingredients

  • cup flour
  • ½ cup sugar
  • 3 tsp double acting baking powder
  • ½ tsp salt
  • 1 egg
  • ½ cup milk
  • ¼ cup Crisco oil use 1 tbsp or so more
  • 1 cup fresh blueberries Frozen, slightly thawed, or ¾ cup well-drained canned blueberries also work well.

Instructions

  • Sift together first 4 ingredients.
  • In small bowl, mix by hand the egg, milk and oil.
  • Add first mixture, plus blueberries. Fold them in carefully - don't beat.
  • Fill well greased muffin or paper cupcake holders ½ full with mixture.
  • Bake 20-23 minutes at 400°. Makes 12 regular size muffins (or more).
  • Sprinkle mixture of sugar and cinnamon on muffins before baking.
