Quick Rhubarb Pudding (Microwave)
Ingredients
- 3 cups rhubarb cut up
- 1 cup water
- ½ cup sugar
- 3½ oz pkg vanilla pudding not instant
Instructions
- Combine rhubarb, water and sugar in 2-quart glass bowl.
- Microwave, uncovered, 8 minutes or until rhubarb is softened.
- Stir in vanilla pudding mix and microwave until mixture comes to a boil (about 45 seconds to 1 minute).
- Serve warm or cold.
