Quick Rhubarb Pudding (Microwave)

Ingredients

  • 3 cups rhubarb cut up
  • 1 cup water
  • ½ cup sugar
  • oz pkg vanilla pudding not instant

Instructions

  • Combine rhubarb, water and sugar in 2-quart glass bowl.
  • Microwave, uncovered, 8 minutes or until rhubarb is softened.
  • Stir in vanilla pudding mix and microwave until mixture comes to a boil (about 45 seconds to 1 minute).
  • Serve warm or cold.
