Ingredients

Pie Filling

  • 1 cup sugar
  • ¼ cup corn starch
  • 1 tsp grated lemon peel
  • cup water
  • 3 tbsp cold water
  • 3 egg yolks
  • 1 tbsp butter
  • 6 tbsp lemon juice
  • 2 tbsp milk

Merengue Topping

  • 3 egg whites
  • 1 tsp lemon juice
  • 3 tbsp sugar

Instructions

Pie Filling

  • Combine sugar, water, and butter. Heat until sugar dissolves.
  • Add corn starch blended with 3 tbsp water.
  • Cook very slowly till clear, about 8 minutes.
  • Add lemon juice and peel, cook 2 minutes.
  • Slowly add egg yolks beaten with milk, bring to boiling point and cool.
  • Put in 8-inch cooked and cooled pie shell.

Merengue Topping

  • Add 3 egg whites, 1 tsp lemon juice, and 3 tbsp sugar. Beat stiff.
  • Cover pie filling with merengue topping.
  • Bake at 350° till brown.
