Lemon Pie
Ingredients
Pie Filling
- 1 cup sugar
- ¼ cup corn starch
- 1 tsp grated lemon peel
- 1¼ cup water
- 3 tbsp cold water
- 3 egg yolks
- 1 tbsp butter
- 6 tbsp lemon juice
- 2 tbsp milk
Merengue Topping
- 3 egg whites
- 1 tsp lemon juice
- 3 tbsp sugar
Instructions
Pie Filling
- Combine sugar, water, and butter. Heat until sugar dissolves.
- Add corn starch blended with 3 tbsp water.
- Cook very slowly till clear, about 8 minutes.
- Add lemon juice and peel, cook 2 minutes.
- Slowly add egg yolks beaten with milk, bring to boiling point and cool.
- Put in 8-inch cooked and cooled pie shell.
Merengue Topping
- Add 3 egg whites, 1 tsp lemon juice, and 3 tbsp sugar. Beat stiff.
- Cover pie filling with merengue topping.
- Bake at 350° till brown.
