Ingredients

Single Recipe

  • 1 egg
  • cup sugar
  • cup vegetable oil
  • cup flour
  • ¾ tsp soda
  • ¼ tsp salt
  • ¾ tsp cinnamon
  • 1 small jar carrot baby food

Double Recipe

  • 2 eggs
  • 1⅓ cup sugar
  • cup vegetable oil
  • 1⅓ cup flour
  • tsp soda
  • ½ tsp salt
  • tsp cinnamon
  • 1 Junior size carrot baby food

Brown Sugar Topping

  • ½ cup brown sugar
  • ¼ cup melted butter
  • 1 tbsp cream
  • Confectioners sugar

Instructions

Carrot Bars

  • Beat egg; add sugar, oil and carrot.
  • Mix dry ingredients and add.
  • Flaked coconut and chopped nuts may be added.
  • Bake at 350° for 25 minutes. 9×9 pan for single; 9×13 pan for double.

Brown Sugar Topping

  • Boil brown sugar and melted butter for ½ minute or longer.
  • Remove from heat; add cream.
  • Add enough confectioners sugar to spread.
  • Cut into bars.
