Blueberry Muffins
Ingredients
- 1½ cup flour
- ½ cup sugar
- 3 tsp double acting baking powder
- ½ tsp salt
- 1 egg
- ½ cup milk
- ¼ cup Crisco oil use 1 tbsp or so more
- 1 cup fresh blueberries Frozen, slightly thawed, or ¾ cup well-drained canned blueberries also work well.
Instructions
- Sift together first 4 ingredients.
- In small bowl, mix by hand the egg, milk and oil.
- Add first mixture, plus blueberries. Fold them in carefully – don't beat.
- Fill well greased muffin or paper cupcake holders ½ full with mixture.
- Bake 20-23 minutes at 400°. Makes 12 regular size muffins (or more).
- Sprinkle mixture of sugar and cinnamon on muffins before baking.
