Chicken Dressing Scallop
Ingredients
- 1 8 oz pkg herb seasoned stuffing mix
- 3 cups chicken cooked, cubed
- ½ cup margarine
- ½ cup flour
- 1 tsp salt
- Dash of pepper
- 4 cups chicken broth
- 6 eggs slightly beaten
Sauce
- 1 can cream of mushroom soup
- ¼ cup milk
- 1 cup sour cream
- Pimento
Instructions
- Preheat oven to 325°.
- Prepare stuffing according to package directions for driest stuffing. Spread in 9×13 inch pan. Top with chicken.
- In a sauce pan melt margarine; add flour, salt and pepper. Add broth and stir until thick.
- Stir a small amount of the hot liquid into beaten eggs, then return all to hot mixture. Pour over chicken.
- Bake for 40 to 45 minutes until knife comes out clean. Let stand to set.
Sauce
- Mix soup, milk and sour cream together and heat.
- Pour over chicken bake when serving. Garnish with pimento.
