Chicken Dressing Scallop

Ingredients

  • 1 8 oz pkg herb seasoned stuffing mix
  • 3 cups chicken cooked, cubed
  • ½ cup margarine
  • ½ cup flour
  • 1 tsp salt
  • Dash of pepper
  • 4 cups chicken broth
  • 6 eggs slightly beaten

Sauce

  • 1 can cream of mushroom soup
  • ¼ cup milk
  • 1 cup sour cream
  • Pimento

Instructions

  • Preheat oven to 325°.
  • Prepare stuffing according to package directions for driest stuffing. Spread in 9×13 inch pan. Top with chicken.
  • In a sauce pan melt margarine; add flour, salt and pepper. Add broth and stir until thick.
  • Stir a small amount of the hot liquid into beaten eggs, then return all to hot mixture. Pour over chicken.
  • Bake for 40 to 45 minutes until knife comes out clean. Let stand to set.

Sauce

  • Mix soup, milk and sour cream together and heat.
  • Pour over chicken bake when serving. Garnish with pimento.
