Rhubarb Crunch
Ingredients

- 1½ cups oatmeal
- 1¼ cups flour
- 1 cup brown sugar
- ⅔ cup butter
- ¼ tsp salt
- 1 tsp cinnamon
Rhubarb
- 1½ cups white sugar
- 3 tbsp flour
- 1½ cups water
- 1 tsp vanilla
- 5 cups rhubarb cut up
Instructions
- Combine: 1½ cups oatmeal, 1¼ cups flour, 1 cup brown sugar, ⅔ cup butter, ¼ tsp salt, and 1 tsp cinnamon.
- Mix to a crumbly mixture and pat in a buttered 9 by 13 pan. Save ⅓ for the top.
- In a sauce pan cook: 1½ cups white sugar, 3 tbsp flour, and 1½ cups water until thick. Add 1 tsp vanilla, 5 cups cut up rhubarb and pour over crumb mixture.
- Sprinkle remaining crumb mixture on top and bake at 350 degrees for 60 minutes until brown.
- Garnish with whipped cream.
