Pork Polynesian
Ingredients
- 1 lb Italian Sausage
- 3 tbsp margarine
- 1 medium green pepper strips
- 1 cup celery diagonally sliced
- ½ cup water chestnuts sliced
- ½ cup bamboo shoots
- ¼ cup brown sugar
- 2 tbsp cornstarch
- ¼ cup cider vinegar
- 8¾ oz pineapple chunks save juice
- ½ cup pineapple juice make up difference with water
- 2 tsp soy sauce
Instructions
- Cook sausage and drain.
- Cook margarine, pepper, celery, onion, chestnuts, and bamboo shoots until slightly tender.
- Combine brown sugar, starch, and vinegar. Stir until smooth. Add juice and soy sauce. Cook until thick, stirring constantlyy.
- Mix veggies, sausage, sauce, and pineapple. Cook until hot.
- Serve over rice or Chow Mein noodles.

I distinctly remember, sorry dad, the night before the recipes were due my dad googling frantically looking for something to submit. If I recall correctly, he selected this because it was something he would like to try at some point.
