Frozen Spiced Crab Apples

Ingredients

  • 16 small ripe crab apples
  • 1 cup sugar
  • 1 cup water
  • 6 cloves whole
  • ½ cup red cinnamon candies
  • ¼ tsp ground ginger
  • Dash of salt
  • 3 strips lemon peel cut 1½x¼ inches

Instructions

  • Remove blossom end of apples, but do not remove stems or peel.
  • In saucepan, combine remaining ingredients. Bring to a boil.
  • Prick apples in several places and place stems up in saucepan.
  • Return to a boil, reduce heat, cover and cook over low heat 10 minutes. Do not stir.
  • Remove from heat. Cool apples completely in syrup.
  • Pick up by stems and pack in freezer containers. Strain juice over apples.
  • To serve, thaw 1-2 hours before use.
